The Owners
Robert Moreau
Robert Moreau moved to Winston-Salem in May of 1993 and fell in love with the city. He worked selling nuts, bolts and construction supplies which helped him get acquainted with the city. Moreau has always had a dream of owning or running a restaurant. With this dream in mind, in the late 1990’s, now wife Tracie and he toured the downtown looking for that perfect restaurant space. Winston-Salem’s initiative for downtown development was in its infant stages in the mid to late 1990’s so the restaurant idea was hot. It just wasn’t in the cards for Mr. Moreau to own a restaurant at the time. Jumping forward to 2006, the restaurant dream was resurrected during a vacation with Co-Owner Ricky Seamon and his wife Kati. We agreed to meet once a week until we either opened the restaurant or left it a dream.
Bib's Downtown
Bib’s downtown is a labor of love for food and Winston-Salem. Co-Owner’s Ricky Seamon and Robert Moreau hatched the idea while on vacation in April 2006. Just acquaintances at time, Ricky and Robert to their surprise, had very similar ideas on the perfect restaurant for Downtown Winston-Salem. Following vacation, we met over dinner once a week. During those weekly meetings, Ricky’s Father-in-Law, Mark Little, was folded into the mix. Mark became a co-owner and the core of the restaurant. Mark has had a personal cooking service specializing in on-site cooking of pulled pork, ribs, chickens and beef brisket.
The name came from the fact that Mark Little wears “bib” overalls as his everyday attire. It is also fitting for our patrons to perhaps wear a “bib” to enjoy our food. Also, our location is “downtown” right across from the Forsyth County Public Library. All these facts together brings us fittingly to the name “Bib’s Downtown.”
Jump forward to 2008 and 675 W. Fifth Street. All our dreams have come true and Bib’s Downtown is open to the public. Bib’s Downtown’s next step is to become a Winston-Salem hallmark restaurant where people come from all over to eat our specially smoked meats and homemade sides.
Ricky Seamon
A Davie county native, Ricky was raised around the restaurant business. Although ending up in the plumbing industry here in Winston-Salem, Ricky had always had an obvious affection for preparing and eating food. Once he met his wife, Kati, his appreciation for how food is prepared and served was increased by his now father-in-law, Mark Little.
Helping Mark on his private events when available only increased the drive to create for himself. As fate would have it, when Robert and Ricky hatched their plan for a restaurant on vacation, they couldn’t help but roll Mark into the mix.
Helping with the design and build of Bib’s Downtown, Ricky had his hands full. Now that the dream of Bib’s has come alive, he is not able to take an active role in the day to day operations, but still plays an integral role in the business.
Mark Little
Our pitmaster Mark Little has a rich history of cooking and living in Winston-Salem. Born in Winston-Salem, NC Mark comes from a long line of cooks. His father and Grandfather worked together at Williams & Company Meat Market at the Downtown City Market in the 1920's and 30's. His Uncle cooked in several downtown restaurants starting at the age of 13.
His Grandmother cooked and served several meals out of her home during the Great Depression. With all that history, it seems only right that Mark returns to Downtown Winston-Salem for a restaurant venture of his own. Learning most of his techniques from his Mother who learned from his Grandmother, and along with many other influences, Mark has kept alive his passion for cooking through the years.
For the past 5 years Mark has had his own personal cooking service, "Little by Little Specialities." He tantalizes his clients with a variety of slow cooked meats and delicious homemade sides. Mark is now bringing his own style and flavors back to Downtown Winston-Salem at Bib's Downtown. Come try his own blend of dry rubs and sauces and discover our taste is "Not Eastern, nor Western, It's Bestern!"
